“There’s this concept of all the elements… earth, air, water, fire,” Sydney explains as she vaguely describes to Tina how she envisions her dish.
We see pickled daikon, fennel salad and puree, nduja sauce, seared duck, roasted bread, and additional ingredients along the worktop for ONE dish. It’s times like this that chefs appreciate working with an American Range 6-burner range & griddle for space and efficiency. It’s 1:30 a.m. and Tina and Sydney grow more and more frustrated trying make ideas work.
Back in the kitchen later that morning, Carmy and the team are timing how many seconds it takes to get from the worktops to the oven. The floor is covered in tape outlining where the equipment will go. The team is trying to move from one station to the next in under 7 seconds to maximize efficiency.

Uncle Kalinowski drops in unexpectedly and is suddenly frustrated by the status of the renovation.
“No progress, we don’t open.”
6 weeks to open.
In the morning, Tina is back at culinary school. She takes out Carmy’s get s&!% done knife to use for her first task of the day – filleting a fish. “Excellent cut Chef,” her culinary instructor says. Tina smiles and thanks him before looking at the empty station next to her where Ebra once worked.
Back at The Bear, Carmy continues to run around the restaurant while Sydney picks out tabletop items. She tries to stop Carmy, but he has to leave. He promises her he’ll be back to help, and on his way out, stops to say:
“Chaos menu – I just, I don’t know. Let me get back to you on it, okay?”
Sydney widens her eyes and shakes her head confused, only to feel more distraught when Natalie tells her Carmy is leaving to hang out with Claire. The two sit for a moment, taking a breath.
Carmy and Tina also take a breath – removing themselves from work to attend parties. For Carmy, it’s the first time he’s ever attended a party. For Tina, it’s definitely not her first rodeo singing karaoke.
We pause on a blissful, temporary note, where The Bear comes second, and life comes first.
