Chrane's "The Bear" Test Kitchen

Episode 6 - Fishes

Recap: Season 2, Episode 6 - Fishes

“It’s the most wonderful time of the year,” by Andy Williams plays in the background, but Carmy, Natalie, & Mikey stand outside, smoking a cigarette. In Episode 6, we take an anxiety-inducing trip down memory lane for a family Christmas party at the Berzatto household.

“Happy you’re home bear,” Mikey says to Carmy. Although the youngest in the family, Carmy is the first to make it out of his hometown with a solid career ahead of him. At this point in time, he has finished his culinary education and is working full-time.

The three take one last breath, mustering up the strength to go back inside for a chaotic ‘Seven Fishes’ dinner. Back in the kitchen, Donna Berzatto is drinking red wine while shuffling between 15 different cooking stations and engaging in controversial family conversations.

Sauces are boiling over, timers are going off, dishes are piling up, and family members are screaming in the kitchen. In an attempt to cool things down, Mikey entertains in the living room, Natalie secretly pours the alcohol out in the sink, and Carmy manages prep for his mother.

Before the family sits down for dinner, Carmy catches Mikey taking a breather upstairs. He tells him that he has an idea and shows him a mock-up drawing of a restaurant building with a bear head on the front doors.

“That’s beautiful Carmy, that’s perfect,” Mike says sadly.

“Yea Mike, we could do this, you know?” Carmy smiles as a tear drops down Mikey’s face.

Downstairs at the table, Uncle Steve is asked to say grace.

“It’s great that we’re all together, and healthy, I think. No one is physically very sick. I’m so grateful, um, for this beautiful meal….”

He stops, takes a breath, and continues, “Listen. Everyone’s asking what is the seven fishes or why do we do it? And I think I know what my definition is… It’s a chance to be together and to take care of each other. And to eat together. And there’s seven fishes, which means you have to make seven entirely different dishes. Seven entirely different ways. And that takes a lot of time. And, I think spending that time and using that time on the people that we love is how we show them that we love them.”

Carmy gazes at Uncle Steve, hands interlocked with each other. His face is red, skin is glazed, and eyes are wide. It becomes clear that the commercial kitchen isn’t the first environment he’s stepped in that’s high stress/high stimulation.

The real anxiety-inducing component of this episode for the Chraniacs? The fact that seven entirely different dishes are cooked in ONE chambered oven! We speak for everyone when we say that when you need to bake, roast, air fry, or grill various menu items at once, you need an Alto-Shaam Converge Multi-Cook Oven… This combined Combi & Multi-Cook oven tackles different food items in multiple chambers at different temperatures & fan speeds. And ALL without flavor transfer. It’s THE ULTIMATE chaos menu solution.

How do you stay on top of cooking multiple dishes at a time? What’s your classic meal or side you make for the family over the holidays?
